Why “Lula café” ?
“Lula” stands for “grandmother” in the Nasa language. Lula Café is a coffee roasting company located in the Nada de Path -yu indigenous reservation in the municipality of Cajibio, Cauca and 20 km from the city of Popayán, being thus at an altitude of 1765 meters above sea level with an average temperature of 19 ° C. We have families Nasas and peasant indigenous producers who offer us their coffee in the:
– Castilla,
– Tabi,
– Colombia and Caturra varieties.
Process:
– Washed –
When the fruit is ripe for picking, we begin harvesting.
All the berries are picked. The beans are then removed from their pods. They are stored in a tank where the beans (depending on several factors) undergo a fermentation process for 16 to 19 hours.
Our company cultivates parchment coffee with a moisture content of 10 to 11%, well-preserved. The transformation process from parchment coffee to roasted coffee begins with threshing, where the husk is separated from the bean and then separated through mesh for better classification.
After obtaining the beans of a uniform size, we roast them at a temperature of 215°C with a roasting time of 17 to 19 minutes per burst for medium roast (the roasting time varies depending on the roast type). After the coffee beans have cooled and roasted, we let them degas in a suitable container for 8 hours.
